Smoked Chicken-Caesar Salad
- Asiago-Garlic Croutons
- 1-1/2 qt. baguettes, cut into 1/2-inch cubes
- 2 Tbsp. butter, melted
- 2 Tbsp. olive oil
- 1/2 cup Kraft Shredded Asiago
- 2 tsp. garlic, minced
- Salad
- - pancetta, thinly sliced
- - romaine lettuce leaves
- - smoked chicken breasts, sliced
- 3 cups Pure Kraft Refrigerated Asiago Caesar Dressing
- - Parmesan cheese, shaved
- Asiago-Garlic Croutons: Toss bread cubes with butter, oil, cheese and garlic.
- Spread onto bottoms of 2 full-sheet pans (or onto bottom of 1 half-sheet pan for trial recipe).
- Bake in 325 degrees F standard oven 20 to 30 min.
- or until lightly browned, stirring occasionally.
- Cool completely.
- Salad: Place pancetta in parchment-lined full-sheet pans.
- Bake in 400 degrees F standard oven 7 to 10 min.
- or until crisp.
- Drain on paper towels.
- For each serving: Arrange 3-1/2 oz.
- (100 g) lettuce leaves in same direction on one side of plate.
- Place 2-1/2 oz.
- (70 g) chicken at base of leaves, overlapping slices slightly.
- Top with 1 oz.
- (30 g) pancetta, 2 Tbsp.
- (30 mL) dressing, 1/4 cup (50 mL) Asiago-Garlic Croutons and 1/2 oz.
- (15 g) Parmesan cheese.
