Low-Fat Oatmeal Raisin Cookies
- 1 egg
- 1 c. packed brown sugar
- 2 Tbsp. vegetable oil
- 3/4 c. nonfat, gelatin-free plain yogurt
- 2 tsp. vanilla
- 2 c. old-fashioned rolled oats
- 1 1/2 c. flour
- 1 tsp. baking soda
- 1 1/2 tsp. cinnamon
- 1/4 tsp. salt
- 1 c. raisins
- Beat egg, brown sugar and oil until smooth.
- Beat in yogurt and vanilla.
- Add oats, flour, baking soda, cinnamon and salt. Beat until well mixed.
- Stir in raisins.
- Drop batter by rounded teaspoonfuls, about 2-inches apart on baking sheet lightly sprayed with vegetable oil spray.
- Bake at 350u0b0 for 10 to 12 minutes or until cookies are lightly browned.
- Cool on wire rack.
- Each cookie contains 59 calories.
- Makes 48 cookies.
