Sausage Potato Bake Recipe
- 1 1/2 lbs. potatoes, sliced 1/3 inch thick
- 1/4 c. water
- 2 tbsp. sausage drippings
- 2 tbsp. snipped fresh parsley
- Salt and pepper to taste
- 1/2 pound carrots, sliced 1/8 inch thick
- 1 pound bulk sausage, cut into 8 patties
- 2 tbsp. flour
- 1/4 teaspoon thyme
- 1 c. lowfat milk
- Paprika
- Place potatoes, carrots, and water into a 1 qt round casserole.
- Cover with plastic wrap and microwave on high 8 min, stirring midway through cooking.
- Preheat browning utensil 4 to 5 min.
- Press sausage patties onto browning utensil with metal spatula.
- Microwave on high 3 min.
- Turn patties over and rotate browning utensil.
- Microwave on high 3 min.
- Cover and set aside.
- Place 2 Tbsp.
- drippings from sausage into a 2 c. glass measure.
- Stir in flour, parsley, thyme, salt, and pepper.
- Using a wire whisk, blend in lowfat milk.
- Whisking midway through cooking, microwave on high 3 to 4 min or possibly till thickened.
- Pour sauce over potato mix; stir to combine.
- Place sausage patties on top; dust with paprika.
- Cover and microwave on high 3 min or possibly till heated through.
- Makes 4 to 5 servings.
