Snap Peas With Peppers and Basil
- 2 teaspoons olive oil
- 1 teaspoon garlic, minced
- 1 12 lbs snap peas, whole
- 12 cup yellow bell pepper, chopped
- 12 cup red bell pepper, chopped
- 13 cup fresh basil, chopped
- 12 teaspoon sugar
- 12 teaspoon lemon zest, grated
- 14 teaspoon salt
- 14 teaspoon black pepper
- 2 tablespoons fresh lemon juice
- Heat oil in a nonstick skillet over medium-high heat.
- Saute the garlic for 30 seconds.
- Add peas and bell peppers.
- Saute for about 2-3 minutes, depending on how crisp you like your vegies.
- Stir in the basil, sugar, lemon rind, salt, and pepper.
- Saute for 30 seconds.
- Add lemon juice and saute for another 30 seconds.
- Serve.
