Spicy Carrot Fries with Tzaziki Sauce
- 8 whole Small To Medium Carrots
- 3 Tablespoons Olive Oil
- 2 teaspoons Curry Powder
- 1/2 teaspoons Cayenne
- 1 teaspoon Salt
- 1- 1/2 teaspoon Cumin Powder
- 1 whole Cucumber, Peeled And Diced
- 1/2 Tablespoons Lemon Juice
- 7 ounces, weight Greek Yogurt
- 2 Tablespoons Dill
- 3 Tablespoons Sour Cream
- 1 teaspoon Salt
- Preheat oven to 425 degrees F.
- In a large bowl, toss carrots with olive oil, curry powder, cayenne, salt and cumin powder.
- Evenly spread out on a baking sheet making sure that the carrots dont overlap.
- Bake for 20-30 minutes, or until golden brown.
- For the tzatziki sauce, add all of the ingredients to a food processor and blend until thoroughly incorporated.
- Transfer to a bowl and refrigerate for 15 minutes.
