Savory Cabbage Soup Recipe
- 2 tbsp. butter
- 1 med. onion, minced
- 1 pound cabbage, coarsely minced
- 5 c. chicken stock
- 1 1/2 teaspoon mixed herbs
- 1/2 teaspoon dry dill weed
- 1 c. diced ham
- 1 bunch scallions, minced
- 1 pound potatoes, peeled & coarsely minced
- Salt & Pepper to taste
- 1 c. grated Swiss cheese
- 1/2-1 teaspoon cayenne pepper
- Heat butter in large pan; saute/fry ham, onion, scallions and cabbage till onion is transparent (7 min).
- Add in potatoes, stir.
- Pour in stock and add in salt and pepper.
- Bring to boil, turn down heat and simmer for 45 to 50 min, over medium heat.
- Add in cheese, a little at a time, stirring till melted.
- don't boil.
- Immediately before serving, add in remaining ingredients.
