Liver Dumplings Recipe
- 1/2 pound beef liver, grated
- 1 tbsp. butter
- 1 egg
- 1 tbsp. grated onion
- 1 teaspoon chopped parsley
- 1 c. cracker crumbs
- 1/2 teaspoon salt & pepper to taste
- Freeze liver; it is easier to grate.
- Remove outer skin from liver and grate into bowl.
- Add in remainder of ingredients and mix well.
- Let stand for at least 30 min.
- Drop by tsp.
- into boiling beef soup.
- Cook, covered for 20 min.
