Mini Savoury Biscuits with Turkey & Arugula
- Feta-Veggie Biscuits
- baking mix
- 1 qt. baby spinach leaves, chiffonade
- 3 cups crumbled feta cheese
- 1 cup red peppers, small dice
- 1 cup yellow peppers, small dice
- 4 tsp. garlic, roasted, chopped
- 4 tsp. lemon zest
- 1 tsp. black pepper
- 4-1/2 cups milk
- Sandwiches
- 2 cups Kraft Mayo Real Mayonnaise
- 1 cup Kraft Greek with Feta and Oregano Dressing
- 2 Tbsp. fresh basil, chopped
- 2-1/4 qt. baby arugula
- turkey breast, roasted, sliced
- 12 each plum tomatoes, cut into 6 thin slices King Sooper's 1 lb For $0.99 thru 02/09
- Feta-Veggie Biscuits: Combine all ingredients except milk in large bowl.
- Add milk; stir just until baking mix is moistened.
- Use #12 scoop to portion batter into 36 mounds (or into 9 mounds for trial recipe) in parchment-lined sheet pan.
- Bake in 375 degrees F-convection oven 15 min.
- or until lightly browned.
- Remove to wire racks; cool completely.
- Sandwiches: Mix mayonnaise, 1/4 cup (60 mL) of the dressing (or 1 Tbsp.
- 15 mL of the dressing for trial recipe) and basil.
- Toss arugula with remaining dressing.
- For each serving: Split 1 Feta-Veggie Biscuit; spread 1/2 Tbsp.
- (25 mL) of the mayo mixture onto each cut side.
- Fill with 1-1/2 oz.
- (45 g) turkey, 2 tomato slices and 1/4 cup (60 mL) arugula.
