Tortilla Stack Ups Recipe
- 1 pkg. corn tortilla
- 2 to 3 lbs. grnd hamburger
- 1 med. onion, diced
- 1 can lg. black olives, sliced
- 1 to 2 cans enchilada sauce (usually 1 lg. can)
- 1 med. size pkg. Cheddar cheese (mild), grated
- 1 sm. pkg. Mozzarella cheese, grated (optional)
- Cook hamburger, onion, and black olives; drain and set aside.
- Layer each ingredient as follows.
- Cover bottom of pan or possibly glass dish with small amount of sauce right out of the can.
- Place tortilla layer over sauce to cover bottom of pan.
- Add in hamburger mix, spreading to cover tortilla.
- Add in cheese to cover hamburger mix and repeat procedure till your at the top of your pan or possibly glass dish, about 5 to 6 layers.
- For the last layer, save sufficient cheese to cover and add in a few uncooked sliced olives for decoration.
- Cover and heat in oven at 350 degrees till cheese has melted inside stack-ups, about 30 to 40 min.
- Can serve about 6.
- Remember to add in sauce on top of each tortilla layer before hamburger mix.
- Add in spicy peppers as desired.
