Holiday Cookies
- 1 cup butter
- 1 cup granulated sugar
- 1 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla
- 2 cups all-purpose flour
- 12 teaspoon baking powder
- 1 teaspoon baking soda
- 12 teaspoon salt
- 1 12 cups quick oats
- 1 cup shredded coconut
- 12 cup walnuts, chopped
- 1 cup raisins
- 1 cup dates, chopped
- Heat oven to 375 degrees.
- In a small mixing bowl, cream together butter, eggs, sugars and vanilla.
- Set aside.
- In large mixing bowl, sift together flour, baking powder, baking soda and salt.
- Stir creamed mixture into dry ingredients.
- Mix thoroughly.
- Add oatmeal, coconut, walnuts, raisins and dates, stir to combine.
- Drop dough by rounded teaspoonfuls 2 inches apart on a greased baking sheet.
- Bake 10-12 minutes or until light brown.
- Cool slightly before removing from baking sheet.
