Paula's Pumpkin Chocolate-Chip Muffins

  1. Preheat oven to 350 degrees F. Line a 12-cup muffin pan with paper muffin cups; spray liners lightly with nonstick cooking spray.
  2. In large bowl, mix first six ingredients; add chocolate chips, tossing to coat.
  3. In another small bowl, whisk together remaining ingredients; add to flour mixture and stir just until combined (do not overmix).
  4. Fill each muffin cup about two-thirds full.
  5. Bake for 20 to 25 minutes, until muffins spring back when lightly touched.
  6. Cool muffins on rack
