Steak Rumaki W/Bourbon Vanilla Sauce

  1. Whisk bourbon, sugar and vinegar together in a bowl; set aside.
  2. Season the steak with salt and pepper.
  3. Wrap each chunk in a piece of bacon along with a piece of scallion and a slice of water chestnut, skewer with a toothpick.
  4. Heat saute pan over medium heat.
  5. Brown rumaki on all sides about 8 minutes total; transfer to a plate.
  6. Pour off drippings, then deglaze pan with bourbon mixture.
  7. Simmer until slightly syrupy, 2-3 minutes.
  8. Take off heat; add vanilla and salt to taste.
  9. Serve sauce over rumaki.
