Easy Quesadilla Chicken
- 1 lb chicken breast, boneless, skinless
- 1 (15 ounce) can diced tomatoes
- 1 (8 ounce) can salsa verde
- 1 (1 1/4 ounce) package taco seasoning
- 1 cup hot water
- 1 chicken bouillon cube
- Add bouillan cube to hot water and dissolve in a 1-quart saucepan.
- Add chicken breasts to pan and boil until cooked throughout.
- Shred chicken in pan while retaining juices.
- Add taco seasoning, diced tomatoes and salsa verde to chicken; simmer for 20 minutes.
- Serve with cheese, tortillas/chips, sour cream and/or lettuce.
