Aalu Rassa (Indian Potato Soup)

  1. Boil potatoes in pressure cooker with enough water.. Give three to four whistle.. Keep for cooling..
  2. Open the pressure cooker lid n take out potatoes.. Peel the skin.
  3. Now take half of potatoes n mash partially with light hand.
  4. Remain half potatoes cut into cubes.
  5. Keep aside.
  6. Heat oil in a skillet...
  7. When oil start to smoke.. Add cumin seeds.. Its start to pop.. Now add chopped garlic.. Saute it till brown.. Add chopped onion.. Saute it till transparent.. Add chopped ginger.. Saute it.. Keep flame in medium.
  8. Now add chopped tomatoes n salt.
  9. Keep lid on the pan.. After two minutes open the lid.
  10. Stir it.
  11. Now add turmeric, red chilli n black pepper.. Stir continuously.
  12. It's begin to release oil.
  13. Now add mashed n cubes potatoes..
  14. Mix well..
  15. When all spices coat the potatoes.. Add water.. Cook for 5-7 min.. Now it's soup consistency..
  16. Off the flame.. Sprinkle coriander leaves.. Add butter.
  17. Enjoy with bread.
