Vegetable Herb Pilaf

  1. In a bowl combine rice and 3 cups of water, set aside.
  2. In a large saucepan heat oil over medium heat.
  3. Add onion, potato, cauliflower, carrots, salt and pepper.
  4. Cook and stir 1 to 2 minutes.
  5. Add peas, cook and stir 1 minute.
  6. Add rice water mixture.
  7. Bring to boiling, reduce heat.
  8. Cover and simmer 10 to 15 minutes.
  9. Remove from heat, let stand 5 minutes.
  10. Top with fresh basil and parsley.
