Vegetable Herb Pilaf
- 1 12 cups white rice
- 2 tablespoons vegetable oil
- 13 medium onion, sliced
- 13 cup coarsely chopped potato
- 12 cup chopped cauliflower
- 13 cup sliced carrot
- 12 teaspoon salt
- 12 teaspoon ground pepper
- 12 cup frozen peas
- 2 teaspoons chopped fresh basil
- 2 teaspoons chopped fresh parsley
- In a bowl combine rice and 3 cups of water, set aside.
- In a large saucepan heat oil over medium heat.
- Add onion, potato, cauliflower, carrots, salt and pepper.
- Cook and stir 1 to 2 minutes.
- Add peas, cook and stir 1 minute.
- Add rice water mixture.
- Bring to boiling, reduce heat.
- Cover and simmer 10 to 15 minutes.
- Remove from heat, let stand 5 minutes.
- Top with fresh basil and parsley.
