Three-Cheese Sweet Potato Pancakes
- - sweet potatoes, peeled, shredded
- 32 slices OSCAR MAYER Bacon, crisply cooked, crumbled Rite Aid 2 For $7.00 thru 02/06
- 16 each eggs
- 1-1/2 qt. coarsely crushed saltines (crackers)
- 1 qt. shredded fontina cheese
- 2 cups onions, finely chopped King Sooper's 1 lb For $0.99 thru 02/09
- 2 cups roasted red peppers, finely chopped
- 2 cups shredded Bel Paese cheese
- 2 cups shredded Parmesan cheese
- 1 cup flour
- to taste salt and pepper
- 1-1/2 cups oil
- Mix all ingredients except oil.
- Shape into 48 patties (or eight patties for trial recipe), using about 1/3 cup of the potato mixture for each patty.
- Heat oil in large nonstick skillet on medium heat.
- Add patties, in batches; cook 3 to 5 min.
- on each side or until golden brown on both sides.
- Carefully transfer to sheet pans.
- Bake in 350 degrees F-convection oven 3 to 5 min.
- or until internal temperature reaches 140 degrees F.
