Chicken Egg Sandwich Recipe
- 8 slices salt free whole wheat bread
- 3 tbsp. unsalted sweet butter
- 4 lettuce leaves
- 1/2 carton Egg Beaters (hard cooked & cut into 4 pcs, directions below)
- 3/4 pound sliced, cooked chicken breast
- 1 med. tomato, sliced
- Grnd black pepper
- Spread one side of bread slices with butter.
- Layer lettuce leaves, Egg Beaters, chicken and tomato slices on 4 slices of whole wheat bread.
- Sprinkle lightly with pepper.
- Top with remaining bread slices.
- Cut into quarters and serve.
- To hard cook Egg Beaters: Pour into heavy 8" skillet.
- Cover tightly.
- Cook over very low heat for 10 min.
- Remove from heat.
- Allow to stand, covered, for 10 min.
- Makes 4 sandwiches.
