Pork Fillets - Caramelized

  1. Pre - heat oven 200C / 400F / Gas6.
  2. Season pork fillets with salt and pepper.
  3. Coat the pork fillets in sugar.
  4. Add to a frying pan with hot oil.
  5. As the pork caramelizes turn to get an even colour.
  6. Once done put into the pre heated oven for 12-15 minutes ( 6-8 minutes longer for well done ).
  7. Remove once cooked and leave to rest.
  8. To make the sauce add white wine vinegar to a pan and reduce.
  9. Add Tomato puree or ketchup plus the chicken stock.
  10. Bring to a boil and cook for a few minutes.
  11. To finish if required add butter Worcestershire and Tabasco sauce.
  12. To serve slice fillets and serve with a little sauce.
