Blueberry-Lime Parfaits

  1. To make curd: In a small, nonreactive saucepan, whisk egg yolks, lime juice, and sugar.
  2. Set over medium heat, and stir constantly with a wooden spoon until thickened, 10 to 12 minutes.
  3. Remove from heat; stir in butter 1 tablespoon at a time.
  4. Transfer to a bowl, press plastic wrap onto surface of the curd, and cool completely in refrigerator.
  5. Stir zest into curd.
  6. Stir together yogurt and sugar.
  7. In each of 4 six-ounce glasses, layer yogurt, curd, and berries; repeat.
  8. Garnish with a lime wedge.
