Mele Alla Crema (Baked Apples With Cream)

  1. Soak 4 ounces of amaretti cookies in the wine until very soft.
  2. Meanwhile, dissolve sugar in saucepan over moderate heat, stirring.
  3. In separate saucepan, heat 1/2 cup heavy cream until it boils.
  4. When sugar has dissolved and browned, add boiling cream, mixing well.
  5. Scrape down sides and corners of saucepan.
  6. Let cool.
  7. Preheat oven to 350 degrees.
  8. Whip the remaining 1/2 cup cream until firm.
  9. Reserve Y of the whipped cream for decorating.
  10. Add the rest to the cooled sauce.
  11. Fill each apple with the soaked amaretti.
  12. Put apples in a greased baking dish and add water to a depth of 1/8 inch.
  13. Place in the oven and bake about half an hour, until the apples are tender but still firm.
  14. Remove from the oven and let cool.
  15. Arrange the apples in a deep serving dish.
  16. Pour cream sauce over them and pipe reserved whipped cream around them.
  17. Crumble the remaining amaretti cookies and sprinkle over all.
