Potato & Beet Salad
- 1 Beetroot
- 3 Potatoes
- 2 Boiled eggs
- 1/4 Onion
- 1 Mayonnaise & Sour Cream
- Boil the whole beets for 30-60 minutes.
- Let them cool and then peel the skins.
- Chop into pieces and drizzle with wine vinegar.
- Set aside.
- Boil the potatoes whole and then peel the skin and chop.
- Soak the onion in water and then slice thinly.
- Place the onion on top of the potatoes while still warm to soften them.
- Add the boiled egg and season with salt and pepper.
- Combine the equal amounts of mayonnaise and sour cream and then mix with the salad.
