Baked Jerk-Seasoned Chicken Halves
- Jerk BBQ Sauce
- 1-1/2 qt. OPEN PIT Original Restaurant Recipe Barbecue Sauce
- 1-1/2 Tbsp. ground allspice
- 1 Tbsp. dried thyme leaves
- 1 Tbsp. black pepper
- Chicken
- 12 each broiler-fryer chickens (3 lb.each), cut lengthwise in half Whole Foods 1 lb For $3.99 thru 02/09
- Jerk BBQ Sauce: Bring all ingredients to boil in saucepan on medium heat, stirring frequently; simmer on medium-low 2 min.
- Remove from heat.
- Chicken: Place chicken, cut-sides down, in single layer in parchment paper-lined sheet pans.
- Bake in 350 degrees F-convection oven 30 to 40 min.
- or until done (165 degrees F), brushing evenly with half of the Jerk BBQ Sauce for the last 10 min.
- Brush with remaining Jerk BBQ Sauce.
