Sweet Potato and Feta Pancakes

  2. Place grated sweet potato, cilantro, cayenne, egg, flour, and feta in a bowl and blend with a fork.
  3. Season to taste with salt and pepper.

  5. Heat oil in a large skillet over high heat until very hot (if you drop a dollop of batter, it should immediately start sizzling).
  6. 3.
  7. Add batter by the spoonfuls.
  8. Mold them into a pancake shape with the back of a spoon.
  9. Cook until both sides are browned, about 2 minutes per side.
  10. 4.
  11. Sprinkle pumpkin seeds if using and top with sour cream, yogurt, or applesauce.
