Easy 5 Minute Italian Style Eggplant & Bacon
- 1 Eggplant (slim Japanese type)
- 1 slice Bacon
- 1 tbsp Olive oil
- 1 Grated garlic
- 1 Salt
- 1 Pepper
- 1 1/2 tbsp Grated Parmesan cheese
- 1 Dried parsly (optional)
- Cut the eggplant in half vertically and then into 7mm slices.
- Cut the bacon into 1cm wide slices.
- Heat the frying pan and add the olive oil and grated garlic.
- Add the eggplant and bacon from Step 1 and cook.
- Once the eggplant has become tender, flavor with salt, pepper, and Parmesan cheese.
- Stop the heat.
- Transfer Step 3 to a dish and garnish with dried parsley.
