Easy 5 Minute Italian Style Eggplant & Bacon

  1. Cut the eggplant in half vertically and then into 7mm slices.
  2. Cut the bacon into 1cm wide slices.
  3. Heat the frying pan and add the olive oil and grated garlic.
  4. Add the eggplant and bacon from Step 1 and cook.
  5. Once the eggplant has become tender, flavor with salt, pepper, and Parmesan cheese.
  6. Stop the heat.
  7. Transfer Step 3 to a dish and garnish with dried parsley.
