Hearty Party Pozole
- 1 lb lean boneless pork loin (diced in 1/2 inch pieces)
- 14 teaspoon pepper
- 2 tablespoons vegetable oil, divided
- 1 large onion, chopped
- 4 garlic cloves, finely chopped
- 1 tablespoon chili powder
- 12 teaspoon ground cumin
- 3 (15 1/2 ounce) cans white hominy, drained (mote blanco)
- 1 (14 1/2 ounce) can diced tomatoes, no-salt added, drained
- 1 (14 1/2 ounce) can reduced-sodium chicken broth
- 1 (4 1/2 ounce) canchopped mild green chilies
- finely sliced green onion, for garnish
- Season pork with pepper.
- Heat 1 tablespoon vegetable oil in a large saucepan over high heat.
- Add pork and cook and stir until pork is no longer pink.
- Transfer pork to a clean plate.
- Reduce heat to medium.
- Add remaining tablespoon vegetable oil, onion and garlic.
- Cook and stir about 5 minutes, or until softened and golden.
- Stir in chili powder and cumin.
- Add hominy, tomatoes, chicken broth and chiles, and bring to a boil.
- Add pork, reduce heat, and simmer for about 10 minutes until pork is cooked to desired doneness.
- To garnish, serve with green onions.
