Hearty Party Pozole

  1. Season pork with pepper.
  2. Heat 1 tablespoon vegetable oil in a large saucepan over high heat.
  3. Add pork and cook and stir until pork is no longer pink.
  4. Transfer pork to a clean plate.
  5. Reduce heat to medium.
  6. Add remaining tablespoon vegetable oil, onion and garlic.
  7. Cook and stir about 5 minutes, or until softened and golden.
  8. Stir in chili powder and cumin.
  9. Add hominy, tomatoes, chicken broth and chiles, and bring to a boil.
  10. Add pork, reduce heat, and simmer for about 10 minutes until pork is cooked to desired doneness.
  11. To garnish, serve with green onions.
