Chocolate Crunch Granola
- 3 cups rolled oats, preferably old-fashioned
- 1 cup crispy rice cereal (like Rice Krispies)
- 12 cup brown sugar, packed
- 13 cup pecans, chopped
- 12 teaspoon salt
- 14 teaspoon cinnamon
- 14 cup honey
- 2 tablespoons canola oil
- 1 teaspoon vanilla extract
- 2 ounces bittersweet chocolate, finely chopped
- 12 cup dried cranberries (or raisins)
- Preheat oven to 300F.
- Cover a rimmed baking sheet with parchment paper.
- In a large mixing bowl, combine oats, Rice Krispies, brown sugar, pecans, salt and cinnamon.
- Set aside.
- Place the honey and oil in a microwave safe dish, like a 2 cup glass measuring cup, and microwave on high for 30-60 seconds until warm.
- Add vanilla and chocolate.
- Stir with a whisk until chocolate is melted and mixture is smooth.
- If necessary, microwave at 50-70% power for 30-45 seconds to completely melt chocolate.
- Alternatively, heat the honey and oil in a small pot on the stovetop until warm, remove from heat and stir in vanilla and chocolate.
- Pour chocolate mixture over oat mixture and gently mix until combined.
- Bake at 300F for 20-30 minutes, stirring every 10 minutes.
- Let granola cool on pan.
- Stir in cranberries.
