Tuna Croquettes with Rainbow Slaw
- 12 ounces, weight Rainbow Or Broccoli Salad (located In The Produce Section Of Most Grocery Stores)
- 1/2 cups Mayonnaise
- 2 Tablespoons Sugar
- 1/2 teaspoons Paprika
- 1/4 teaspoons Garlic Salt
- 2 cans Albacore Tuna (6 Oz Cans)
- 2 Tablespoons Mayonnaise
- 3 whole Large Eggs
- 1 cup Plain Bread Crumbs
- 1/2 cups Minced White Onion
- 1 dash Garlic Powder
- 1 dash Salt And Pepper
- 1/2 cups Light Olive Oil
- To prepare the Rainbow Slaw: Combine the 1/2 cup mayo, sugar, paprika, and garlic salt in a large bowl.
- Add the Rainbow, or Broccoli Slaw mix to the bowl and mix well until fully coated.
- Let refrigerate for at least an hour.
- To prepare the Tuna Croquettes: Drain the tuna and mash with a fork.
- Mix the tuna with the 2 Tablespoons of mayo, eggs, bread crumbs, white onion, garlic powder, and salt and pepper.
- You might find it easier to use your hands to do the mixing.
- Preheat the light olive oil in a large frying pan and heat it up.
- Using your hands, take a small (3-4 tablespoon) amount of the tuna mixture and make a patty, then place it in the oil.
- Repeat with the remainder of the tuna mixture.
- You should have about 16 or so patties.
- Fry until you have a golden brown crust on both sides (flipping once).
- Remove to a plate covered with paper towels and allow to cool slightly.
- Serve with a spoonful of the Rainbow Slaw on top.
