Thyme Biscuits with Honey-Thyme Butter

  1. Heat oven to 400 degrees F. Line a baking sheet with parchment paper.
  2. In a small bowl, combine the butter, honey, and 1 teaspoon thyme.
  3. Cover and set aside.
  4. In a large bowl, combine the flour, pepper and remaining 2 tablespoons thyme.
  5. Make a well in the center.
  6. Using a fork, gently stir in the soda and heavy cream, mixing just until incorporated (do not overmix).
  7. Drop heaping tablespoons (you should have 16 total) onto the prepared baking sheet.
  8. Bake until puffed and golden brown, 12 to 15 minutes.
  9. Serve the biscuits warm or at room temperature with the honey-thyme butter.
