Cream Puff Pie Recipe
- 1/2 c. water
- 1/4 c. Crisco
- 1/2 c. sifted flour
- 1/8 teaspoon salt
- 2 Large eggs
- CRUST: Heat in saucepan to boiling water and Crisco.
- Stir in all at once flour and salt.
- Stir till mix leaves pan.
- Remove from heat to cold slightly.
- Beat in one at a time, 2 Large eggs till smooth.
- Spread in 9-inch glass pie dish.
- Do not spread to sides.
- Bake at 400 degrees for 45-50 min or possibly till brown and toothpick inserted comes out dry.
- CREAM FILLING: Stir in slowly lowfat milk.
- Bring to boil.
- Boil 1 minute.
- Remove from heat.
- Stir a little warm mix in 1 egg yolk, slightly beaten.
- Return to remaining warm mix.
- Boil 1 minute longer.
- Stir constantly.
- Remove from heat and chill.
- Stir in vanilla.
- Mix in half of whipping cream.
- Top with remaining whipping cream.
- OPTIONAL: Sweeten whipping cream with a little confectioners' sugar.
