Two to One Plum Jam

  1. Prunes are better for this recips.
  2. They have less liquid.
  3. Wash plums and remove all stones.
  4. Chop in the food processor so it is almost a puree.
  5. Mix with sugar.
  6. Cook in the stainless steel pot.
  7. Bring to a full boil and then reduce to a small heat.
  8. Stir occasionally and remove foam.
  9. It usually takes 3-4 hours of slow cooking.
  10. It is ready when liquid evaporates and color of the jam becomes a lot darker then when you started.Volume of cooking mass will decrease to about 2/3 of the starting volume.
  11. Cool completely and store in the clean jar in the refrigerator.
  12. It lasts until next season.
  13. No need to freeze.When it is ready and completely cool it should spread like a peanut butter.
