Two to One Plum Jam
- 2 lbs black plums or 2 lbs prunes
- 1 lb sugar
- Prunes are better for this recips.
- They have less liquid.
- Wash plums and remove all stones.
- Chop in the food processor so it is almost a puree.
- Mix with sugar.
- Cook in the stainless steel pot.
- Bring to a full boil and then reduce to a small heat.
- Stir occasionally and remove foam.
- It usually takes 3-4 hours of slow cooking.
- It is ready when liquid evaporates and color of the jam becomes a lot darker then when you started.Volume of cooking mass will decrease to about 2/3 of the starting volume.
- Cool completely and store in the clean jar in the refrigerator.
- It lasts until next season.
- No need to freeze.When it is ready and completely cool it should spread like a peanut butter.
