Fagioli Agli Uccelli

  1. In a saucepan, heat oil over medium heat.
  2. Add garlic and sage and cook until garlic is fragrant, but not browned.
  3. Add tomatoes, raise heat and simmer 5 minutes.
  4. Add black-eyed peas and cook 5 minutes longer.
  5. Season with salt and pepper.
