Bread Sauce
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 2 cups milk
- 1/8 teaspoon ground mace
- Freshly milled white pepper
- 1 cup day-old white bread, crusts removed, and bread torn into small pieces (about 3 slices)
- 1/2 cup country cured ham, cut into julienne (about 3 ounces)
- In a small saucepan, melt the butter.
- Remove from the heat and whisk in the flour.
- Return to the heat, add the milk, mace, and pepper to taste and whisk constantly until the sauce thickens and is velvety-smooth.
- Fold in the bread and ham, and pour into a heated sauceboat.
