Light Guacamole
- 1 10-ounce package frozen peas
- 1 jalapeno
- 1 medium clove garlic
- 2 tablespoons lime juice
- 1 ripe medium avocado
- 1/2 cup light sour cream
- 2 to 3 green onions to yield 1/4 cup
- Few sprigs cilantro to yield 2 tablespoons chopped
- Sprinkle salt
- Freshly ground black pepper
- Steam peas for a couple of minutes over boiling water.
- Wash, trim and seed jalapeno.
- With food processor running, process as much of the jalapeno as you like, and mince the garlic.
- Add drained peas, lime juice, avocado and sour cream, and process until smooth.
- Chop the green onion and cilantro, and stir into the mixture.
- Season with salt and pepper.
