Simple Huevos Rancheros
- 1 medium onion, chopped
- 2 clove garlic, chopped
- 1 packages chorizo sausage
- 1 can beans, your choice
- 1 butter
- 1 eggs
- 1 salt and pepper
- 1 shredded cheddar jack cheese
- 1 tortillas
- Cook your onion and garlic on med heat in a large skillet until just turning translucent.
- Remove your chorizo from its casing if needed.
- Add to the onions and garlic, crumbling it.
- Use whatever beans you like.
- I usually use refried pinto beans but you can use refried black or even whole beans if you like.
- After the chorizo is all crumbled and cooked add your beans.
- Meanwhile fry your eggs in a bit of butter salting the yolks right before serving.
- Warm your tortillas and roll up.
- To serve: place a scoop of the beans and chorizo on your plate top with shredded cheese of your choice and then with a fried egg.
- Do not forget to salt your yolk and add pepper if you like.
- Serve with warm rolled tortillas.
