Turkey Feta Meatloaf
- 1 pound Ground Turkey
- 1/2 cups Crumbled Feta
- 1/4 cups Dry Parsley
- 1 Tablespoon Garlic Powder
- 2 teaspoons All-seasoning Salt
- 1 teaspoon Black Pepper
- 2 Tablespoons Ricotta Cheese, Sour Cream Or Plain Yogurt
- 2 whole Eggs
- 1 cup Plain Breadcrumbs
- Preheat oven to 375 degrees F.
- Mix together all ingredients until well-blended.
- You can either dig in with your hands or use a rubber spoon.
- I used the spoon because the turkey was so cold!
- Form into a greased loaf pan, smoothing the top so it cooks evenly.
- Pop it into the oven and bake for 40 minutes until cooked through and edges are golden brown.
- Serving suggestions: top with more ricotta cheese, diced tomatoes and garlic and baby spinach, or on two pieces of hearty toasted bread in sandwich form.
