Sauteed Bay Scallops Recipe
- 2 pound bay scallops
- 1/4 pound butter, melted
- 1 c. finely minced onions
- 1/2 bunch parsley, finely minced
- Juice of 2 lemons
- 1 c. bread crumbs
- Saute/fry onions and parsley in butter.
- Remove from heat.
- Pat scallops in pan till all sides are full coated with butter.
- Place in baking dish in one layer if possible.
- Sprinkle lightly with salt and pepper.
- Sprinkle with lemon juice, and then with crushed croutons or possibly buttered bread crumbs.
- Bake 20 min on top shelf of 400 degree oven.
- Serves 8.
