Huevos Rancheros #2
- 32 ounces refried beans canned
- 1 teaspoon red hot pepper sauce
- 12 large eggs
- 1 x butter or margarine
- 1/2 pound monterey jack cheese shredded
- 1 package corn tortillas (6-inch)
- Salsa
- 1 x cilantro from 10 sprigs, minced
- 2 each tomatoes chopped, ripe
- 1 each jalapeno pepper thinly sliced
- 2 tablespoons onions chopped
- 1/2 each avocados finely diced
- Combine all ingredients for salsa;set aside.
- Heat refried beans in a saucepan with hot pepper sauce;keep warm.
- Fry eggs in butter or margarine to desired doneness.
- Lay 2 tortillas on each plate.
- Place one fried egg on each tortilla.
- Top with refried beans, cheese and salsa.
- Serve immediately.
