Honey-Mustard Chicken with Couscous and Peas

  1. Preheat the broiler.
  2. Lightly spray the broiler pan with cooking spray.
  3. In a small bowl, stir together the mustard and honey.
  4. Brush about half the mixture over one side of the chicken.
  5. Broil the chicken about 4 inches from the heat for 3 minutes.
  6. Turn the chicken over.
  7. Using a clean brush, brush with the remaining mustard mixture.
  8. Broil for 3 to 4 minutes, or until the chicken is lightly browned on the outside and no longer pink on the inside.
  9. Meanwhile, in a medium saucepan, stir together the remaining ingredients except the couscous.
  10. Cook, covered, over medium-high heat until the water comes to a boil.
  11. Stir in the couscous.
  12. Remove from the heat.
  13. Let stand, covered, for 5 minutes.
  14. Fluff with a fork.
  15. Serve the chicken over the couscous mixture.
