Easy Vegetable Lasagna Recipe

  1. In large skillet heat oil.
  2. Add in garlic and broccoli and saute/fry on medium heat 3 min.
  3. Add in carrots and zucchini.
  4. Season with salt and pepper and oregano and stir well.
  5. Cover; cook about 5 min till tender, not mushy.
  6. Cook lasagna in boiling water till tender but still hard; drain.
  7. Rinse with cool water and drain again.
  8. Heat up spaghetti sauce.
  9. Mix Ricotta cheese, 1 c. Mozzarella cheese, Parmesan, salt and pepper in small bowl.
  10. In 9x13 baking pan with buttered bottom spread 2 Tbsp.
  11. sauce, 3 lasagna noodles over sauce.
  12. Spread half cheese mix over noodles, half vegetables.
  13. Cover with sauce; repeat.
  14. End with noodles, sauce and Mozzarella.
