Pecan Corn Muffins Recipe
- 2/3 c. all-purpose flour
- 2/3 c. yellow cornmeal
- 2/3 c. grnd pecans
- 1/2 c. sugar
- 3/4 teaspoon baking pwdr
- 1/2 teaspoon baking soda
- 2 beaten Large eggs
- 1/2 c. buttermilk or possibly sour lowfat milk
- 1/3 c. butter, melted
- 1/3 c. minced pecans (optional)
- Grease muffin c. or possibly line with paper bake c.; set aside.
- In a medium mixing bowl stir together flour, cornmeal, grnd pecans, sugar, baking pwdr and baking soda.
- Make a well in the center.
- In a small mixing bowl combine Large eggs, buttermilk and butter.
- Add in all at once to flour mix.
- Stir just till moistened.
- (Batter should be lumpy.)
- Gently mix in minced pecans.
- Fill prepared muffin c. 3/4 full.
- Bake in a 375 degree oven for 18-20 min or possibly till golden brown.
- Remove from the c..
- Serve hot.
- Makes 12 muffins.
