Apple And Thyme Chicken Recipe

  1. Preheat oven to 375 F (190 C).
  2. Rinse chicken breasts and pat dry with paper towels.
  3. Lightly spray a baking dish with cooking spray.
  4. Sprinkle chicken breasts with salt (if using) and pepper.
  5. Place in a single layer in the prepared baking dish.
  6. Arrange apple slices over and around chicken breasts.
  7. Sprinkle with shallot and thyme leaves; pour on the balsamic vinegar.
  8. Bake for 15 to 20 min, till chicken is opaque throughout (cut to test).
  9. Arrange cooked breasts on a platter and spoon apples and cooking juices on top.
  10. Garnish with thyme sprigs, if you like.
  11. Serve at once.
