Denver Omelette Sandwiches for Two
- 4 eggs
- 1/4 cup milk
- 1/8 tsp. ground black pepper
- 1/2 cup thin green pepper strips
- 4 slices (80 g) deli ham, chopped
- 1/4 cup finely chopped onions King Sooper's 1 lb For $0.99 thru 02/09
- 1/2 cup Cracker Barrel Shredded Mozzarella Cheese
- 4 slices Texas toast white sandwich bread, toasted
- Whisk eggs, milk and black pepper in small bowl until blended.
- Stir in green peppers, ham and onions.
- Pour into 8-inch nonstick skillet sprayed with cooking spray; cover.
- Cook on medium heat 6 min.
- or until egg mixture is set but top is still slightly moist, occasionally lifting edge with spatula and tilting skillet to allow uncooked portion to flow underneath.
- Sprinkle cheese onto half the omelette.
- Slip spatula underneath omelette, tip skillet to loosen and gently fold omelette in half.
- Remove from heat; let stand, covered, 2 min.
- Cut omelette in half.
- Fill toast slices with omelette halves to make 2 sandwiches.
