Oatmeal, Nut and Berry Breakfast Bars

  1. Preheat oven to 350F Grease a 9x9 baking pan with nonstick cooking spray.
  2. In a large bowl, cream butter with sugar until light.
  3. Whisk in eggs and vanilla.
  4. In a medium bowl, whisk together flour, oats, flax, baking soda , salt, and cinnamon.
  5. Piur into wet ingredients and stir until combined.
  6. Spread 2/3 of batter evenly int pan and spread with jam.
  7. Add almonds to remaining batter and drop evenly over jam to create a cobbles effect.
  8. (there will be a lot of jam showing).
  9. Bake 30 minutes or until golden and surface is firm to the touch.
  10. Remove from oven and cool completely in pan.
  11. Cut into bars.
