Vegetarian Tortilla Pie

  1. Preheat oven to 500 degrees F. Spray 15 1/2- by 10 1/2-inch jelly-roll pan with nonstick cooking spray.
  2. In small bowl, mix salsa and tomato sauce.
  3. In medium bowl, mix black beans, corn, and cilantro.
  4. Place 1 tortilla in jelly-roll pan.
  5. Spread one-third of salsa mixture over tortilla.
  6. Top with one-third of bean mixture and one-third of cheese.
  7. Repeat layering 2 more times, ending with last tortilla.
  8. Bake pie 10 to 12 minutes, until cheese melts and filling is hot.
  9. Serve with reduced-fat sour cream if you like.
