Lasagna
- 1 lb. ground beef chuck
- 1/2 lb. ground lean pork
- 1/2 c. chopped onion
- 2 cloves garlic, crushed
- 2 Tbsp. olive oil
- 3 1/2 c. tomatoes (about 28 oz. can)
- 1 1/3 c. tomato paste (two 6 oz. cans)
- 1/2 c. water
- 1 tsp. salt
- 1/2 tsp. oregano
- 1/2 tsp. basil
- 1/4 tsp. crushed red pepper
- 1 lb. lasagna, uncooked
- 4 c. (8 oz.) Ricotta or creamed cottage cheese
- 2 c. (8 oz.) shredded Mozzarella cheese
- 1/4 c. grated Parmesan cheese
- 1/4 c. chopped parsley
- 4 eggs
- 1 tsp. salt
- 1/4 tsp. pepper
- Sauce:
- Saute beef, pork, onion and garlic in oil in 4-quart saucepan until meat is well-browned.
- Add tomatoes, tomato paste, water, salt, oregano, basil and red pepper; simmer, covered, 1 hour.
