Whole Wheat Yeast Bread

  1. Dissolve the yeast into 1-1/2 cups (350 ml) lukewarm water.
  2. Add white sugar.
  3. Mix together with salt and white flour.
  4. Allow to sit until it bubbles - about an hour.
  5. Mix 1 cup (225 ml) water with brown sugar (or honey, if using).
  6. Add whole wheat flour and oil or butter.
  7. Mix well into yeast mixture.
  8. Using white flour, put out onto board and knead until not sticky.
  9. Divide into two parts and put into two oiled or greased bread pans.
  10. Oil the top and allow to stand till double in bulk.
  11. Preheat oven to 350 degrees (175 C.).
  12. Bake till loaves sound hollow when tapped, about 45 minutes.
