Golden Yams Recipe

  1. Cook yams in large pot covered with water till soft (test with fork) approximately 1 hour.
  2. Remove from heat.
  3. Drain.
  4. Cover with cool water so you can handle.
  5. Slip off peel and put through ricer or possibly mash thoroughly with fork.
  6. Add in raisins, pineapple, pecans; mix well.
  7. Sprinkle spices, honey and orange juice, vanilla to moisten.
  8. Mix well.
  9. Pour into casserole which has been greased (or possibly I use butter flavored Pam).
  10. Push butter pats down around middle of yams.
  11. Since everything is cooked, can be made ahead of time, refrigerated till needed.
  12. Place on middle rack of oven and heat till bubbly.
  13. Then if you like, cover with marshmallows.
  14. Return to oven and toast till lightly browned.
  15. Delicious.
