Doe's Chili
- 5 pounds coarse ground beef
- 3/4 cup chili powder
- 1/4 cup cayenne pepper
- 1/4 cup ground cumin
- 1/4 cup salt
- 1/4 cup sugar
- 32 ounces tomato paste
- 10 cloves garlic, minced
- 2 12 -ounce cans tomato sauce
- 1 128 -ounce can pinto beans in chili sauce
- 1 10 -ounce can beef broth
- 1 large yellow onion, diced
- 1 large green bell pepper, diced
- Tamales, for serving
- Into a large pot set over medium heat, add the ground beef and cover with water.
- Bring to a simmer and cook just until the meat is cooked through, 20 to 25 minutes, stirring occasionally.
- Strain the beef and then add back into the pot.
- Add the chili powder, cayenne, cumin, salt, sugar, tomato paste, garlic, tomato sauce, pinto beans, broth, onions and peppers and mix until well combined and thick.
- Add 2 cups water to the pot to thin slightly and simmer for 1 hour 30 minutes.
- To serve, spoon some chili on top of beef tamales or use as a side dish.
