Crockpot Cheesy Tortellini
- 1- 1/2 cup Spinach, Cut Into Pieces
- 2 cans Italian Diced Tomatoes (14.5 Oz. Each)
- 8 ounces, weight Cream Cheese
- 4 cups Chicken Broth
- 1 cup Shredded Cheddar Cheese
- 1 bag Frozen Cheese-filled Tortellini (19 Oz. Bag)
- 1/2 cups Grated Parmesan Cheese
- In a deep saucepan (or in your crockpot), add all ingredients except for tortellini and Parmesan cheese and put the lid on.
- Cook on the stove on medium-low heat (or on high if using crockpot).
- Sauce will be thin at first but will thicken as it cooks.
- Cook for about 1 hour, stirring occasionally.
- Then mix in tortellini.
- Continue to cook, this time uncovered, until pasta is al dente, about 45 minutes.
- Spoon out onto serving plates and top with Parmesan cheese.
- Delicious!
- Optional: You can also add pre-cooked ground sausage or turkey into the mix.
- Simply brown the meat first then add it into the sauce mixture at the beginning of the cooking process.
