Tomato Fan

  1. Wash and dry the tomato.
  2. Using a knife cut the tomato lengthwise with cuts about 1/4 inch apart; stop about 1/4 inch from the bottom of the tomato.
  3. Place a strip of mozzarella in between the cuts of the tomato and follow with the basil leaves.
  4. Do this until tomato is completed.
  5. Salt and pepper to taste and top with a couple of dashes of balsamic vinegar.
